  1. Place the slivered almonds in a small skillet over medium heat.
  2. Toast the almonds for about 4 minutes, stirring occasionally, until golden and fragrant. Remove from heat and set aside.
  3. Pat the sole fillets dry with paper towels. Dredge each fillet in flour, shaking off any excess.
  4. In a large nonstick skillet, heat 1 teaspoon of olive oil over medium heat until shimmering.
  5. Add half of the floured sole fillets to the skillet. Cook for about 2 minutes per side, or until golden brown and cooked through.
  6. Sprinkle lightly with salt and pepper. Remove the cooked fish from the pan and place on a warm plate. Keep warm.
  7. Add the remaining 1 teaspoon of olive oil to the same skillet and cook the remaining sole fillets in the same manner. Remove and keep warm.
  8. Pour the dry white wine into the hot skillet. Bring to a boil and reduce heat, simmering until the wine is reduced by half.
  9. Stir in the fresh lemon juice, drained capers, and butter. Continue stirring until the butter is completely melted and the sauce is smooth.
  10. Return the sole fillets to the pan briefly to warm through, or simply pour the sauce over the fish on the serving platter.
  11. Garnish with the toasted almonds and serve immediately.
