Ingredients

Directions

  1. Select the white leaves from the cabbage and shred them finely.
  2. Place the shredded cabbage in a pot, cover with water, and boil for 5 minutes, then drain and set aside.
  3. In a large skillet, melt the butter or heat the shortening over medium heat.
  4. Add the chopped onions and sauté until they turn a light golden color, being careful not to burn them.
  5. Transfer the sautéed onions to a large soup pot containing the 12 cups of water and bring to a boil.
  6. Add the drained cabbage, chopped frankfurters, and chopped dill to the pot.
  7. Season with salt and pepper to taste.
  8. Reduce heat and simmer for approximately 1 hour, or until the cabbage and onions are very soft.
  9. Serve the soup hot.

Note

Serve with homemade croutons for added crunch and texture.

The soup will reduce slightly during the simmering process.

For a vegetarian version, omit the frankfurters and add extra vegetables or beans for heartiness.

Fresh dill is preferred for the best flavor, but dried dill can be used in a pinch (use 1 teaspoon dried instead of 1/2 tablespoon fresh).
