South African Vegetable Biryani
Description
This South African Vegetable Biryani is a fragrant and hearty one-pot meal that blends Indian spices with local flavors. The dish features long-grain rice simmered with potatoes, peas, carrots, and green beans in a rich broth infused with turmeric, cardamom, and cinnamon. A layer of golden fried onions adds a delightful crunch and sweetness, contrasting with the tender vegetables. It is a comforting vegetarian option that is perfect for family dinners or potlucks.Directions
-
In a large, heavy skillet or pot, fry the sliced onions in ghee over medium heat until golden brown.
-
Using a slotted spoon, remove one-third of the golden onion slices and set them aside for garnish.
-
To the remaining onions in the pot, add the ginger, garlic, and chili paste (or crushed chili peppers and cayenne).
-
Fry the spice mixture for 5 to 6 minutes, stirring constantly until fragrant.
-
Add the dried lentils, green peas, chopped carrots, and green beans to the pot.
-
Reduce the heat and cook the vegetables for 15 minutes, adding more ghee if necessary to prevent sticking.
-
Stir in the chopped tomatoes, whole cloves, cinnamon stick, crushed cardamom pods, turmeric, and mint. Cook for 5 minutes.
-
Pour in 1 cup of very hot water, cover the pot, and simmer until the vegetables are half-cooked.
-
Add the rice, chopped potatoes, salt, and another 4 to 5 cups of hot water.
-
Cover tightly and cook for 20 minutes, or until the rice is tender and all the water has been absorbed.
-
Garnish with the reserved fried onion slices before serving.
