  1. Soak the dried red chiles in 1/2 cup of distilled white vinegar for 15 minutes to soften them.
  2. Combine the soaked chiles, vinegar, 4 peeled garlic cloves, and a 1-inch piece of peeled fresh ginger in a blender.
  3. Blend the mixture until it forms a smooth, consistent puree.
  4. Transfer the chili puree to a small bowl.
  5. Stir in 2 teaspoons ground cumin, 2 teaspoons ground coriander, and 1/2 teaspoon ground cinnamon, mixing thoroughly to combine.
  6. Place 4 pounds of quartered, skinned duck pieces in a large bowl or container.
  7. Rub the spice paste generously over the duck pieces, ensuring they are fully coated.
  8. Cover the duck and refrigerate for at least 2 hours to allow the meat to marinate and tenderize.
  9. Heat 2 tablespoons of mild vegetable oil in a large Dutch oven over medium-high heat.
  10. Add the marinated duck pieces to the hot pan and brown them on all sides.
  11. Add 1 teaspoon of salt, 1 cup of water, 2 teaspoons of sugar, and any remaining spice puree from the bowl into the pot.

Although the recipe uses 6 chiles, you may add 4 more if you desire a hotter dish.

Cornish hens may be substituted for duck if preferred.

For best results, allow the duck to marinate for longer than 2 hours, ideally overnight, to deepen the flavors.
