Directions

  1. In a large skillet, melt butter.
  2. Brown meat, a few pieces at a time.
  3. Remove from skillet as they brown.
  4. Saute zucchini in skillet 7-10 minutes.
  5. Return meat and add corn, chilies, garlic, salt, oregano and cumin.
  6. Simmer, stirring occassionally, about 12-15 minutes or until meat is tender.
  7. Stir in cheese until melted.
  8. Garnish with chopped cilantro and serve
