Ingredients

Directions

  1. Place the lime gelatin powder into a large bowl.
  2. Add 1 cup of very hot water to the gelatin powder.
  3. Stir the mixture continuously until the gelatin is completely dissolved.
  4. Pour in the 7-ounce bottle of lemon-lime carbonated soft drink and stir gently to blend.
  5. Chill the gelatin mixture in the refrigerator until it reaches the consistency of unbeaten egg whites (about 30-45 minutes).
  6. Lightly oil a 1-quart decorative mold with vegetable oil; avoid using olive oil as it may impart a flavor.
  7. Invert the mold briefly to drain off any excess oil.
  8. Once the gelatin has thickened slightly, add the cup of thick applesauce to the mixture.
  9. Blend the applesauce into the gelatin mixture quickly and thoroughly.
  10. Pour the combined mixture into the prepared mold.
  11. Chill the mold in the refrigerator until the salad is firm, at least 4 hours or overnight.
  12. Run a knife around the edge of the mold if necessary, then invert onto a serving plate to unmold.

Note

**Garnish Idea:** For a festive touch, you can create frosted grapes. Beat an egg white until frothy, dip fresh grapes into the egg white, and immediately roll them in superfine sugar (or tinted sugar for color). Lay them on waxed paper until dry before using to garnish the salad. Sprigs of fresh mint also make a nice decoration.

**Storage:** Store any leftover salad in the refrigerator, covered, for up to 3 days. It is best served chilled.

**Variation:** You can use different flavors of gelatin and carbonated beverages to create different color and flavor combinations, such as strawberry and ginger ale or raspberry and lemon-lime soda.
