Description

This Special Cocoa Cake is a nostalgic treat that delivers intense chocolate flavor through a traditional method of blooming cocoa with boiling water. The result is a moist, tender crumb with a sophisticated depth that modern instant mixes often lack. Made with cake flour for a delicate texture and brown sugar for a hint of caramel, this dessert is perfect for birthdays, holidays, or whenever you crave something truly indulgent. The recipe yields two generous layers, ideal for stacking with your favorite frosting. It&# 226;ÂÂs a timeless classic that brings a touch of old-fashioned elegance to any gathering, relying on simple pantry staples to create a show-stopping finale to your meal.

Directions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans.
  2. In a small saucepan, mix the cocoa and brown sugar together.
  3. Add the boiling water to the cocoa mixture, stirring until smooth and well combined.
  4. Bring the mixture to a boil over medium heat, then reduce heat and cook for 3 minutes, stirring constantly, until slightly thickened. Remove from heat and allow to cool completely.
  5. In a medium bowl, sift the cake flour once, then measure it out. Mix the measured flour with baking powder, baking soda, and salt. Sift this dry mixture together twice to ensure it is light and aerated.
  6. In a large mixing bowl, cream the shortening until soft and fluffy.
  7. Gradually add the sugar to the shortening, beating thoroughly after each addition until light and creamy.
  8. Beat in the vanilla extract. Add the eggs one at a time, beating well and until fluffy after each addition.
  9. Stir the cooled cocoa mixture into the egg and shortening mixture until well blended.
  10. Add the dry flour mixture and milk alternately to the wet ingredients, beginning and ending with the flour mixture. Beat until smooth after each addition.
  11. Divide the batter evenly between the prepared cake pans.
  12. Bake for 25 to 30 minutes, or until a wooden toothpick inserted into the center comes out clean.
  13. Allow cakes to cool in pans for 10 minutes, then remove from pans to wire racks to cool completely before frosting.
