Description

This Spice Beer Cake is a decadent dessert that leverages the carbonation and malty depth of beer to produce an incredibly moist and tender texture. The batter is infused with a classic blend of warming spicescinnamon, allspice, and clovesthat complement the sweetness of packed brown sugar. Plump raisins or chopped dates and crunchy pecans or walnuts are folded in to provide delightful bursts of flavor and texture in every bite. The beer not only adds moisture but also enhances the complexity of the spices, resulting in a cake that feels both comforting and sophisticated. It is an excellent choice for holiday gatherings, autumn dinners, or simply when you crave something richer than a standard vanilla cake. Serve it warm with a scoop of vanilla ice cream or a dusting of powdered sugar for the ultimate treat.

Ingredients

Directions

  1. Preheat oven to 350F (175C). Grease and flour a 10-inch tube pan or a 9x13-inch baking pan.
  2. In a large bowl, sift together flour, baking soda, salt, cinnamon, allspice, and cloves. Set aside.
  3. In a separate bowl, cream together the shortening and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition.
  5. In a small bowl, toss the raisins (or chopped dates) and chopped nuts with 2 tablespoons of the flour mixture to coat them. This prevents them from sinking during baking.
  6. Add the remaining flour mixture alternately with the beer to the creamed mixture, beginning and ending with the flour. Mix until just combined.
  7. Gently fold in the coated fruit and nuts.
  8. Pour the batter into the prepared pan.
  9. Bake for 1 hour if using a tube pan, or 45 minutes to 1 hour if using a 9x13-inch pan, or until a wooden toothpick inserted into the center comes out clean.
  10. Allow the cake to cool in the pan for 10 minutes before removing to a wire rack to cool completely.

Note

The brown sugar mentioned in the original directions was missing from the ingredient list but is essential for this recipe. Use 2 cups of packed brown sugar.

For best results, use a dark beer such as a stout, porter, or dark ale. The malty flavors complement the spices better than light lagers.

If you prefer a vegan version, substitute the eggs with 2 flax eggs (2 tbsp ground flaxseed mixed with 6 tbsp water) and use vegetable shortening instead of butter if desired.

Store leftover cake in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to 5 days. It also freezes well for up to 3 months.
