Spice Beer Cake
Description
This classic Spice Beer Cake is a moist, tender dessert that leverages the acidity and carbonation of beer to create a uniquely light crumb. The batter is deeply flavored with a blend of cinnamon, allspice, and cloves, while chopped dates and nuts add chewy texture and richness. The beer not only acts as a leavening agent but also enhances the spice notes, resulting in a complex, home-style flavor profile. Perfect for holiday gatherings, autumn dinners, or as a comforting treat with afternoon coffee, this cake is simple to mix and bake. It pairs beautifully with a simple glaze or whipped cream, making it a versatile centerpiece for any table.Ingredients
Directions
-
Preheat oven to 350&# 194;°F (175ðC). Grease and flour a 10-inch tube pan or a 9x13-inch baking pan.
-
In a large bowl, sift together the flour, baking soda, salt, cinnamon, allspice, and cloves.
-
In a separate bowl, cream the shortening and brown sugar until light and fluffy. Beat in the eggs one at a time until well combined.
-
Toss the raisins (or chopped dates) and chopped nuts with 2 tablespoons of the dry flour mixture to coat them; this prevents them from sinking to the bottom.
-
Add the remaining flour mixture to the wet ingredients alternately with the beer, beginning and ending with the flour mixture. Mix until just combined.
-
Fold the coated fruit and nuts into the batter gently.
-
Pour the batter into the prepared pan. Bake for 1 hour if using a tube pan, or 45 minutes to 1 hour if using a 9x13 pan, or until a toothpick inserted into the center comes out clean.
-
Cool the cake in the pan for 10 minutes before removing to a wire rack to cool completely.

Note
Use a dark beer such as stout or porter for a richer flavor, or a light lager for a milder taste.
Ensure the beer is at room temperature or slightly warm to help activate the baking soda effectively.
For a vegan version, substitute the eggs with flax eggs and use a plant-based shortening.
Store leftovers in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
