Directions

  1. We used diced tomatoes.
  2. Heat the vegetable oil in a large skillet and fry onion until golden.
  3. Add garlic, green pepper, tumeric, and cayenne pepper and fry for 2-3 minutes.
  4. Add tomato juice (or tomatoes) and cumin and cook for 5 minutes.
  5. Next add black-eyed peas and a little water if needed.
  6. Let it simmer for 15 minutes.
  7. Stir in lemon juice.
  8. Serve over rice or cous cous.
