  1. Soak dried prunes in rose wine for 1 hour, then drain.
  2. Heat olive oil in a large sauté pan over medium-high heat until smoking.
  3. Add rabbit giblets or chicken livers and sauté until cooked through, about 8 to 10 minutes.
  4. Add thinly sliced scallions, soaked prunes, and chopped fresh thyme leaves to the pan.
  5. Remove the pan from heat, season with salt and pepper, and allow the mixture to cool completely.
  6. Stuff the cooled prune mixture into the rabbit's stomach cavity and sew closed with butcher twine.
  7. Thread the stuffed rabbit onto a rotisserie spit and secure with prong ends.
  8. Season the exterior of the rabbit with salt and pepper.
  9. Place the spit 10 inches above the heat source and turn on the rotisserie.
  10. Roast for 15 to 20 minutes.
  11. Brush the rabbit with honey and continue cooking for another 15 to 20 minutes, or until juices run clear when piercing the thickest part of the hind leg.
  12. Remove the rabbit from the heat and let it rest for 5 minutes before carving.
