  1. Place the beef shank and stewing hen into a large stockpot or kettle.
  2. Cover the meat with water and add 1 tablespoon of salt for each quart of water used.
  3. Bring the liquid to a boil, then reduce heat to low, cover, and simmer slowly until the meat is very tender.
  4. Remove the meat from the broth and allow it to cool enough to handle.
  5. Cut the beef and chicken into bite-sized pieces, discarding the bones.
  6. Return the cubed meat to the broth and bring it back to a boil.
