  1. Boil the red skin potatoes in salted water until tender. Drain, peel, and cut into 1/2-inch cubes.
  2. Boil the carrot in salted water until just tender. Remove, peel, and cut into 1/4-inch thick rounds.
  3. Boil the peas in the salted water used for the potatoes for 5 minutes. Drain and set aside.
  4. Section the orange, remove the membranes, and cut the segments into 1-inch chunks.
  5. Core the apples but do not peel. Chop into small cubes.
  6. In a large bowl, combine the potato cubes, carrot rounds, peas, orange chunks, apple cubes, and chicken cubes.
  7. Press the hard-boiled egg yolks through a sieve into a small bowl.
  8. Whisk in 2 tablespoons of olive oil until a smooth, creamy paste forms.
  9. Stir in 2 tablespoons of cider vinegar, 1/2 cup of mayonnaise, and 1/2 cup of sour cream (or yogurt).
  10. Season the dressing with salt and white pepper to taste.
  11. Pour the dressing over the warm vegetable and fruit mixture. Toss gently to coat evenly.
