Directions
-
In a large bowl, mix flour, brown sugar, grated orange peel, salt, and 2 1/2 tsp sugar.
-
Add chilled butter pieces and cut into the mixture until it resembles fine meal.
-
In a small bowl, blend orange juice, egg yolk, and vanilla extract.
-
Add enough of the juice mixture to the dry ingredients to form a cohesive dough ball.
-
Gather dough into a ball and flatten into a rough 12-inch disc.
-
Position rack in center of oven and preheat to 375 degrees F (191ðC).
-
Roll dough out between sheets of plastic wrap to 1/8 inch thickness.
-
Trim dough to an 11-inch circle using your tart pan as a guide.
-
Remove top plastic wrap and invert dough into a 10-inch round springform pan with removable bottom.
-
Remove bottom plastic wrap and press dough into bottom and up sides of pan; crimp top edges.
-
Freeze tart shell for 15 minutes.
-
Line tart shell with aluminum foil and weight with pie weights or dried beans.
-
Bake until sides are set, about 10 minutes.
-
Remove foil and weights.
-
Bake crust until golden brown, about 16-20 minutes.
-
Sprinkle 2 oz white chocolate over the hot crust.
-
Let stand for 1 minute, then use the back of a spoon to spread melted chocolate over bottom and up sides of crust.
-
Transfer to rack to cool completely.
-
For mousse: Melt 6 oz white chocolate with 1/4 cup heavy cream in a small heavy saucepan over very low heat, stirring constantly.
-
Pour mixture into a bowl and let stand until just cool.
-
Beat egg white in a small bowl until soft peaks form.
-
Gradually add 1 tbsp sugar and beat until stiff but not dry.
-
Fold whipped cream, 1 tbsp Grand Marnier, and egg whites into the chocolate mixture.
-
Spoon mousse into prepared pan, spreading evenly.
-
Refrigerate until mousse is set, at least 2 hours or overnight.
-
To assemble: Fan strawberries by making several lengthwise cuts in each, starting 1/4 inch from base and extending through tip; fan open with fingertips.
-
Bring jam and remaining 1 tbsp Grand Marnier to a boil in a heavy small saucepan, stirring constantly.
-
Transfer jam mixture to a processor and puree until smooth.
-
Brush a thin layer of jam glaze over the set mousse.
-
Place 2 fanned strawberries with stems on opposing sides of the mousse.
-
Arrange remaining smaller fanned strawberries artistically on top.

Note
This tart can be made ahead. After filling with mousse, cover and refrigerate for up to 24 hours. You can also freeze the filled tart (before adding the jam glaze and fresh strawberries) for up to 1 month. Thaw in the refrigerator before finishing.
Ensure the butter is very cold when making the pastry to achieve a flaky crust.
When fanning the strawberries, work gently to avoid bruising the fruit. Choose strawberries of uniform size for a neater presentation.
