Streusel Kuchen
Description
This traditional Streusel Kuchen is a comforting German yeast cake that balances soft, pillowy dough with a crunchy, buttery crumb topping. Enriched with mashed potatoes and potato water, the bread stays moist and tender for days. The overnight rise develops deep, complex flavors, while the streusel topping provides a delightful textural contrast. Perfect for breakfast with coffee or as an afternoon snack with tea, this cake embodies rustic homemade charm.Directions
-
In a large bowl, dissolve the yeast in the lukewarm water and let stand for 5 minutes until foamy.
-
In a separate bowl, mix together the mashed potatoes, potato water, softened butter, and the first 1/2 cup of sugar.
-
Add the yeast mixture to the potato mixture, then stir in 3 1/2 cups of flour until a stiff dough forms.
-
Cover the bowl with a damp cloth and let the dough rise in a warm place overnight (about 8-12 hours).
-
The next morning, beat in the 2 eggs, the second 1/2 cup of sugar, and 1 1/2 cups of flour until smooth and elastic.
-
Cover the dough again and let it rise in a warm place until doubled in size, about 1-2 hours.
-
Punch down the dough and divide it into portions. Roll each portion into a rectangle approximately 6 by 8 inches and 1 inch thick.
-
Place the dough rectangles into greased baking pans.
-
Preheat the oven to 400°F (200°C).
-
In a small bowl, combine the topping flour, topping sugar, and cold butter cubes. Rub the butter into the flour and sugar with your fingers or a pastry cutter until the mixture resembles coarse crumbs.
-
Brush the tops of the cakes with melted butter.
-
Sprinkle the streusel topping evenly over the buttered cakes.
-
Bake for 20 minutes, or until the topping is golden brown and the cakes are cooked through.
-
Cool in the pan for 5 minutes before serving.
