Ingredients

Directions

  1. In a small bowl, combine warm water, sugar, and yeast. Let stand for 5 to 10 minutes until foamy.
  2. In a large mixing bowl, combine flour, salt, and softened margarine or butter. Make a well in the center and pour in the yeast mixture.
  3. Mix until a dough forms, then knead on a floured surface for 5 to 7 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place for 1 hour or until doubled in size.
  5. Preheat oven to 400F (200C). Line a baking sheet with parchment paper.
  6. Punch down the dough and roll it out on a floured surface into a 10x12 inch rectangle.
  7. Sprinkle the provolone and mozzarella cheeses evenly over the dough, leaving a 1-inch border on all sides.
  8. Layer the diced salami and ham over the cheese, then sprinkle with coarsely ground black pepper.
  9. Starting from the long side, tightly roll up the dough into a log shape. Pinch the seams and ends to seal securely.
  10. Place the roll seam-side down on the prepared baking sheet. Cut three small slits on top to allow steam to escape.
  11. Bake for 20 to 25 minutes, or until the crust is golden brown and the internal temperature reaches 190F (88C).
  12. Let cool for 5 minutes before slicing and serving.
