Directions
-
Preheat oven to 375&# 194;°F (190ðC).
-
Line two cookie sheets with parchment paper or lightly grease them.
-
In a small bowl, sift together the flour, baking soda, and salt. Set aside.
-
In a medium mixing bowl, cream together the softened butter, brown sugar, 1/4 cup of the granulated sugar, peanut butter, and vanilla extract using an electric mixer on medium speed until light and fluffy, about 2-3 minutes.
-
Stop the mixer twice during creaming to scrape down the sides of the bowl with a spatula.
-
Add the egg to the mixture and blend on medium speed until almost incorporated, about 10 seconds. Scrape the bowl again.
-
Add the sifted dry ingredients to the wet mixture. Blend on low speed for 15 seconds, then stop and scrape the bowl.
-
Blend on low for an additional 5 seconds until the dough is smooth and fully combined.
-
Measure out 48 rounded teaspoons of dough and roll them into balls with your hands.
-
Dip one side of each dough ball into the remaining 1/2 cup of granulated sugar.
-
Place the dough balls 2 inches apart on the prepared baking sheets, with the sugar-coated side facing down.
-
Bake until light brown, about 8 to 10 minutes.
-
Remove cookies from the oven. Immediately press a Hershey's Kiss, flat side down, firmly into the center of each cookie to embed it.
-
Allow cookies to cool on the baking sheet for a minute, then carefully transfer them to a wire rack or plate to cool completely.

Note
Ensure the butter and egg are at room temperature for the best texture and easiest mixing.
You can use either smooth or crunchy peanut butter based on your preference.
Do not skip the step of pressing the chocolate into the cookies immediately after removing them from the oven; the residual heat helps the chocolate adhere and melt slightly.
Store cookies in an airtight container at room temperature for up to 5 days.
