  1. Place lettuce in a heavy medium pan. Add scallions, butter, salt, and pepper. Cover and cook on high until steam starts to rise. Add peas and water. Cover again, bring to a boil, then lower heat and simmer 10 to 15 minutes or until peas are tender but still retain their bright color. Stir in mint, cover, and steam 1 minute. Serve immediately
