Ingredients

Directions

  1. Drain the pineapple chunks well, reserving 3/4 cup of the pineapple juice. Set the chunks aside.
  2. In a large bowl, combine 1 lb lean ground beef, 1 large egg, 1 cup fresh bread crumbs, 3/4 teaspoon salt, and 1/2 teaspoon ground ginger. Blend well using your hands or a wooden spoon until fully incorporated.
  3. Shape the meat mixture into 1 1/4-inch balls.
  4. Heat 2 tablespoons vegetable oil in a 12-inch skillet over medium-high heat.
  5. Add the meatballs to the skillet. Cook for about 12 minutes, turning frequently, until well browned on all sides.
  6. Using a slotted spoon, remove the meatballs to a plate and set aside.
  7. To the remaining drippings in the skillet, add 3/4 cup chopped scallions and 1 clove crushed garlic.
  8. Cook for about 5 minutes, stirring frequently, until the scallions are tender-crisp.
  9. In a small bowl, stir the reserved 3/4 cup pineapple juice into 2 teaspoons cornstarch until blended and smooth.
  10. Add the pineapple-cornstarch mixture to the skillet along with 2 tablespoons cider vinegar, 1 tablespoon firmly packed light brown sugar, and 1/4 teaspoon ground red cayenne pepper.
  11. Increase the heat to high and bring the sauce to a boil, stirring constantly.
  12. Boil for 1 minute until the sauce thickens.
  13. Return the meatballs to the skillet along with the reserved pineapple chunks and 4 oz fresh Chinese pea pods (or 6 oz thawed frozen pea pods).
  14. Cook for 3 to 5 minutes longer, tossing gently, until heated through and the pea pods are crisp-tender.
