  1. Trim fat from pork and cut into 3/4-inch pieces.
  2. In a medium bowl, mix together egg, 2 tablespoons cornstarch, 2 tablespoons oil, 1 teaspoon salt, 1 teaspoon light soy sauce, and white pepper.
  3. Stir pork pieces into the marinade until well coated, cover, and refrigerate for 20 minutes.
  4. Cut tomatoes into 8 wedges each and cut bell pepper into 1-inch pieces.
  5. In a separate medium bowl, mix together flour, 3/4 cup water, remaining 2 tablespoons cornstarch, 1 teaspoon salt, and baking soda to form a smooth batter.
  6. Heat 1 1/2 inches of oil in a wok or deep skillet to 350F (177C).
  7. Stir the marinated pork pieces into the flour batter until fully coated.
  8. Fry about 15 pieces at a time for 4 minutes, turning frequently, until light brown. Drain on paper towels.
  9. Increase oil temperature to 375F (191C).
  10. Fry all pork pieces together for 1 minute until golden brown and crispy. Drain on paper towels and place on a heated platter.
  11. In a 3-quart saucepan, combine sugar, chicken broth, vinegar, 1 tablespoon oil, 2 teaspoons dark soy sauce, 1 teaspoon salt, and garlic. Bring to a boil.
  12. Mix 1/4 cup cornstarch with 1/4 cup cold water to make a slurry. Stir into the boiling sauce.
  13. Cook and stir for about 20 seconds until the sauce thickens.
  14. Stir in tomatoes, bell pepper, and pineapple chunks. Heat through until boiling.
  15. Pour the hot sauce and vegetables over the fried pork. Serve immediately.
