Ingredients

Directions

  1. Cut the garlic clove in half and rub the cut side vigorously over the inside of a heavy saucepan or fondue pot to coat the surface.
  2. Pour the dry white wine into the prepared pot and place it over medium-low heat.
  3. Heat the wine until it is hot and just beginning to steam, but not boiling.
  4. Add the grated Gruyre cheese to the hot wine by handfuls, stirring constantly with a wooden spoon until each handful is fully melted before adding the next.
  5. Continue stirring until the cheese is completely melted and the mixture is smooth.
  6. In a small bowl, whisk together the cornstarch and 1/4 cup of kirsch until no lumps remain.
  7. Pour the kirsch-cornstarch mixture into the cheese while stirring constantly to incorporate it fully.
  8. Stir in the freshly grated nutmeg and black pepper to taste.
  9. Heat the fondue, stirring constantly, just until it begins to bubble gently. Do not let it come to a full boil, as this may cause the cheese to separate.
  10. Transfer the fondue to a heated fondue pot or keep in the saucepan over the lowest possible flame to maintain temperature.
  11. Serve immediately with the prepared French bread cubes, using long fondue forks to dip the bread into the cheese.
