Description

This classic Szechuan dish features tender flank steak stir-fried with bamboo shoots, celery, and carrots. The beef is marinated in soy sauce, rice wine, and cornstarch for maximum tenderness. Aromatics like garlic, ginger, and Szechuan peppercorns create a complex, spicy flavor profile. Finished with a glossy sauce and hot pepper oil, this dish is perfect for a quick and flavorful dinner.

Directions

  1. Trim the steak and work with half the soy sauce, rice wine, cornstarch, and sesame oil, as well as the water and egg white.
  2. Let stand an hour or more.
  3. Heat peanut oil in a wok and add the marinated meat.
  4. Sear and brown, adding the marinade if any remains on the plate.
  5. Add garlic, ginger, peppercorns, bean paste, and half the remaining soy sauce and wine.
  6. Add all the vegetables and stir fry.
  7. In a bowl put the vinegar, sugar, stock and remaining soy sauce, wine, sesame oil and cornstarch.
  8. Mix thoroughly and add to the wok.
  9. Toss and cook for 30 seconds.
  10. Remove to serving dish, drizzle with hot pepper oil and garnish with minced scallions.
