  1. Puree yogurt, cilantro, lemon juice, ginger, garlic, paprika, curry powder, cumin, coriander, and cayenne in a blender or food processor until smooth.
  2. Pour about 1/4 cup of the yogurt mixture into a small bowl, cover, and refrigerate to serve alongside the kebabs.
  3. Place the chicken breast in a medium bowl and pour the remaining yogurt marinade over it. Toss well to coat the chicken evenly.
  4. Cover the bowl and refrigerate the chicken for at least 1 hour, or up to 24 hours for deeper flavor.
  5. Bring a pot of salted water to a boil. Add the cauliflower cubes and blanch until crisp-tender, about 2 minutes.
  6. Drain the cauliflower and immediately rinse under cold water to stop the cooking process.
  7. Drain the cauliflower well and toss it with the reserved 1/4 cup of yogurt mixture in a separate bowl.
  8. Thread the marinated chicken pieces, red bell pepper chunks, and coated cauliflower onto the soaked bamboo skewers, alternating ingredients.
  9. Preheat a grill or grill pan to medium heat. Oil the grates lightly to prevent sticking.
