Ingredients

Directions

  1. Trim excess fat from the lamb chops.
  2. Heat a 10-inch nonstick skillet over medium-high heat.
  3. Sear the lamb chops in the skillet for about 3 minutes per side, or until browned.
  4. Remove the lamb from the skillet and set aside on a plate.
  5. Add the chopped onion and pine nuts to the same skillet.
  6. Sauté the onion and pine nuts until the onion is softened and translucent.
  7. Return the lamb chops to the skillet.
  8. Sprinkle the tarragon and salt evenly over the lamb and vegetables.
  9. Pour the dry white wine (or chicken broth) into the skillet.
  10. Cover the skillet and reduce heat to medium-low.
  11. Cook for about 20 minutes, or until the lamb is tender.
  12. Serve the lamb chops immediately, spooning the pan sauce over the top.

Note

If using fresh tarragon, chop it finely and add it during the last 5 minutes of cooking to preserve its flavor. If using dried tarragon, add it when you sprinkle the salt.

Do not skip searing the lamb, as this step creates the flavorful fond in the pan that forms the base of the sauce.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet with a splash of broth or water to prevent drying out.

For a richer sauce, you can swirl in a tablespoon of cold butter at the very end of cooking before serving.
