Description

This International dessert features Puff pastry (2/3 lb, Sugar (7 oz, Butter (3 1/2 oz, Apples (4 3/8 lb, peeled. It delivers smooth, comforting richness, sweet, indulgent flavor. A wonderful way to end any meal, especially on special occasions. Simple to make with ingredients you likely already have on hand, this is a recipe you will come back to again and again.

  1. cored, cuted in halves For a 26 cm (10.2 in) diameter pie
  2. Roll out the pastry ( 2 mm, 1/10 in, thick) to a 30 cm (11.8 in) disc and leave it to
  3. rest in the refrigerator.
  4. Pre-heat the oven to 220 oC (435 oF).
  5. Butter a 26cm-diameter disc of baking parchment and carefully line the base of the tin with it.
  6. Spread the sugar over the paper, shaking it evenly over the surface,
  7. place in the middle of the oven and
  8. bake for some 8 minutes to caramelize the sugar.
  9. Keep care !!
  10. Caramelize to light golden brown !!
  11. Then add the butter, let it melt, tttooto and leave to cool a little.
  12. (You can try without baking parchment: it's difficult to unmold !!)
  13. Place the halved apples vertically side by side (i.e.
  14. they MUST be higher than the rim of the tin !).
  15. Bake for some 25 minutes (at the same temperature), tttooto.
  16. 'Line' (i.e.
  17. cover) the apples with the pastry disc .
  18. Bake for 20 25 minutes (at the same temperature), tttooto.
  19. cool 5 minutes on a rack, then turn over and unmold the 'tarte tatin' on a plate,
  20. remove the baking parchment.
  21. The 'tarte tatin' look now like an apple pie :-) (tttooto = take the tin out of the oven !!)
