Description

This Teriyaki Meat Loaf offers a delightful twist on the classic American comfort food by incorporating sweet crushed pineapple and a rich, savory glaze. The ground beef is bound with bread crumbs, onions, and Worcestershire sauce for a tender, juicy texture. The homemade glaze, made from reserved pineapple syrup, soy sauce, sherry, and ginger, adds a glossy finish and a complex flavor profile that balances sweet and salty notes perfectly. It is an excellent choice for weeknight dinners or family gatherings where you want something hearty yet approachable. Serve it sliced with mashed potatoes or steamed vegetables for a complete meal.

Ingredients

Directions

  1. Preheat oven to 350F (175C).
  2. Drain the crushed pineapple, reserving the syrup and 3/8 cup of the pineapple for the glaze.
  3. In a large bowl, combine the remaining pineapple, ground beef, bread crumbs, chopped onion, Worcestershire sauce, minced garlic, salt, and pepper.
  4. Mix ingredients thoroughly until just combined.
  5. Pack the meat mixture firmly into a loaf pan.
  6. Bake the meat loaf for 1 hour and 15 minutes.
  7. While the meat loaf is baking, prepare the glaze by combining cornstarch and ginger in a small saucepan.
  8. Stir in the reserved pineapple syrup, soy sauce, and dry sherry.
  9. Bring the glaze mixture to a boil, stirring constantly, and boil for 1 minute until thickened.
  10. Stir the reserved pineapple pieces into the thickened glaze.
  11. Spoon the glaze over the top of the baked meat loaf.
  12. Let rest for 5 minutes before slicing and serving.

Note

For easier handling, you can shape the meat mixture into a free-form loaf on a baking sheet instead of using a loaf pan.

If you do not have dry sherry, you can substitute with dry white wine or apple cider vinegar (use half the amount).

Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days. Reheat slices in the microwave or oven.

Ensure the internal temperature of the meat loaf reaches 160F (71C) for safe consumption.
