Description
The Chocolate Dome is an impressive dessert that combines a light genoise sponge with rich chocolate mousse and fresh raspberries. Encased in a delicate chocolate shell, this cake offers a luxurious texture and deep cocoa flavor, balanced by the tartness of orange juice and berry sauce. It is perfect for special celebrations or when you want to wow your guests with a visually striking centerpiece. While it requires some patience to assemble and chill, the result is a sophisticated treat that feels homemade yet elegant.Directions
-
Butter an 8-inch stainless steel bowl generously and coat with flour, knocking out the excess.
-
Preheat oven to 350 F (177°C).
-
Beat eggs and sugar in a mixer bowl for 5 minutes until thick, fluffy, and tripled in volume.
-
Rapidly sift and fold in cake flour with a rubber spatula.
-
Scoop batter into the prepared bowl and bake for 35 to 45 minutes until a toothpick comes out clean.
-
Turn out onto a rack to cool completely for 1 hour.
-
Melt 5 oz of semisweet chocolate in a bowl over simmering water, then remove from heat and let cool to room temperature.
-
Whip heavy cream into soft peaks.
-
Fold half the whipped cream into the cooled chocolate, then fold in the remaining cream to complete the mousse.
-
Slice the cooled genoise cake into 3 equal horizontal layers.
-
Line an 8-inch bowl with plastic wrap.
-
Fit the top round piece of cake into the bowl and brush with about 4 tablespoons of orange juice.
-
Spoon one-third of the mousse onto the cake layer and scatter with fresh raspberries.
-
Place the next cake layer on top, brush with 1/3 cup of orange juice, and add the rest of the mousse and more raspberries.
-
Top with the last cake layer and brush with remaining orange juice.
-
Cover with plastic wrap and refrigerate for several hours.
-
Melt the remaining semisweet chocolate over simmering water.
-
Unmold the chilled cake domed-side up onto a rack and peel off the plastic wrap.
-
Spread a thin 10-11 inch disk of the melted chocolate onto a lightly dampened sheet of plastic wrap.
-
Slide the plastic wrap with the chocolate disk into the bowl, lining the bottom and sides.
-
Gently drop the chilled cake, domed side down, into the chocolate-lined bowl, fold the plastic over, and refrigerate until set.
-
Dip fresh leaves into remaining melted chocolate, place coated side up on a plate, and refrigerate until hard.
-
Remove the cake from the fridge, fold back the plastic, and turn domed-side up onto a serving plate.
-
Dust the cake with cocoa powder.
-
Arrange raspberries around the edge and pour raspberry sauce over them.
-
Affix chocolate leaves to the cake using melted chocolate.
-
To make raspberry sauce, puree raspberries with sugar and lemon juice, then push through a sieve.
