Description

This elegant chilled soup offers a delightful interplay of sweet and tart flavors. The bright acidity of fresh strawberries pairs beautifully with the subtle sweetness of honeydew melon. Served cold, it makes for a refreshing dessert or light palate cleanser. The visual appeal of the two-toned swirl is as stunning as the taste. Perfect for summer gatherings, garden parties, or as a unique ending to a light meal. It is simple to prepare using fresh seasonal fruits, requiring no cooking, just blending and chilling. The result is a silky smooth texture that is both indulgent and refreshing.

Ingredients

Directions

  1. Halve the honeydew melon, remove seeds, peel, and cut into chunks.
  2. Combine melon chunks, lime juice, and 1 teaspoon sugar in a blender or food processor.
  3. Blend until smooth to create the melon puree.
  4. Pour melon puree into a 2-cup measuring cup and refrigerate.
  5. Rinse and stem the strawberries.
  6. Combine strawberries and 2 tablespoons sugar in a blender or food processor.
  7. Blend until smooth. If too thick, stir in cranberry juice or water to reach desired consistency.
  8. Pour strawberry puree into a separate 2-cup measuring cup, ensuring equal volume to the melon puree.
  9. Refrigerate both purees for 2 hours to chill thoroughly.
  10. To serve, simultaneously pour both purees from their measuring cups into opposite sides of the same bowl.
  11. Use a knife to gently swirl the two layers together to create a pattern.
  12. Repeat the process for remaining bowls.
