Ingredients

Directions

  1. Preheat oven to 400ðF (204ðC).
  2. Combine boiling water and dried morels in a small bowl; let stand until morels soften, about 35 minutes.
  3. Strain morels, reserving the soaking liquid; coarsely chop the softened morels.
  4. Sprinkle chicken breasts with salt and pepper.
  5. Heat vegetable oil in a large oven-safe skillet over medium-high heat.
  6. Add chicken to skillet and cook until golden brown, about 4 minutes per side.
  7. Transfer skillet to oven and bake until chicken is cooked through, about 15 minutes.
  8. Remove chicken from oven and transfer to a serving platter; cover loosely with foil to keep warm.
  9. Place the same skillet on the stovetop over medium-high heat.
  10. Add chopped onion, minced garlic, and fresh thyme; sauté until golden and fragrant, about 5 minutes.
  11. Pour in the reserved morel soaking liquid, leaving any gritty sediment at the bottom of the bowl behind.
  12. Bring liquid to a boil and cook until most of it evaporates, about 4 minutes, scraping up browned bits from the bottom of the pan.
  13. Add chicken broth and 1/4 cup dry Madeira wine; boil until mixture reduces to 1 1/2 cups, about 5 minutes.
  14. Strain the gravy into a small saucepan; discard solids and add chopped morels to the gravy.
  15. Cover and simmer for 5 minutes.
  16. In a small bowl, whisk together 1 tablespoon cornstarch and 1 tablespoon Madeira wine until smooth.
  17. Whisk the cornstarch mixture into the simmering gravy; cook until thickened, about 30 seconds.
  18. Season gravy with salt and pepper to taste.
  19. Spoon gravy over chicken and serve immediately.

Note

Ingredient Substitutions: If dried morels are unavailable, you can substitute 8 ounces of fresh morels, rinsed and chopped. If Madeira wine is not preferred, dry sherry or Marsala wine makes an excellent substitute.

Storage: Leftover chicken and sauce can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop over low heat, adding a splash of water or broth if the sauce thickens too much.

Tip: Be sure to leave the sediment in the bottom of the soaking bowl when pouring in the liquid, as this often contains sand from the dried mushrooms.
