  1. Place the cubed pork and flank steak in a large Dutch oven and cover with cold water.
  2. Bring the water to a boil over high heat and skim any foam from the surface.
  3. Lower the heat to a simmer and add the bay leaves, garlic cloves, and 1 teaspoon of salt.
  4. Cover and cook over low heat for one hour, or until the meat is tender.
  5. Let the meat cool in the stock, then drain, reserving the stock.
  6. Shred the cooked meat and set aside.
  7. Remove the casing from the chorizo and cut into large chunks.
  8. Place the chorizo in a skillet and fry over medium heat until lightly browned and fat has rendered.
  9. Remove the chorizo from the skillet and set aside.
  10. Add the chopped onion and minced garlic to the skillet and sauté for 2 minutes.
  11. Add the sliced tomatillos, oregano, marjoram, thyme, and ground black pepper to the skillet.
  12. Simmer over low heat for 5 minutes, stirring occasionally, until tomatillos soften.
  13. Stir in the pickled chipotle juice and chipotle peppers.
  14. Add the shredded meat and chorizo to the skillet, stirring well to combine.
  15. Add 1 cup of the reserved stock to the skillet.
  16. Cover and cook over low heat for 15 minutes to allow flavors to meld.
  17. If the sauce is too thick, add more reserved stock as needed.
