Description

This comforting Tomato & Liver Stir-Fry is a classic comfort dish that balances the rich, earthy flavor of beef liver with the bright acidity of fresh tomatoes. The liver is marinated in a blend of soy sauce, sherry, and ginger to ensure it stays tender and flavorful. Cooked quickly in a wok or skillet, the dish comes together in under 30 minutes. The cornstarch creates a light, glossy sauce that coats the ingredients perfectly. It pairs beautifully with steamed rice or noodles, making it an ideal weeknight meal or a hearty lunch. Simple ingredients yield a sophisticated, home-style result that is both satisfying and easy to prepare.

Ingredients

Directions

  1. Cut tomatoes into wedges (about 2 cups) and set aside.
  2. Cut beef liver into 1/2-inch wide strips and set aside.
  3. In a medium bowl, combine soy sauce, sherry, cornstarch, sugar, salt, and ground ginger.
  4. Add the liver strips to the marinade and let sit for 15 to 20 minutes.
  5. Heat a medium skillet or wok over medium-high heat. Add 2 tablespoons of the water.
  6. Add the marinated liver to the skillet. Cook and stir until partially cooked, about 2 minutes.
  7. Remove the liver from the skillet and set aside.
  8. Add the remaining 2 tablespoons of water to the skillet.
  9. Add the onion wedges. Cook and stir until crisp-tender, about 3 minutes.
  10. Add the tomato wedges. Cook and stir until tender, about 1 minute.
  11. Return the reserved liver and marinade to the skillet.
  12. Cook and stir until the liver is cooked through but still pink in the center, about 2 minutes.
  13. Serve immediately.

Note

Serve this stir-fry over hot steamed rice or noodles to balance the flavors.

For best texture, do not overcook the liver. It should remain slightly pink in the center.

If fresh ginger is available, use 1/2 teaspoon of grated fresh ginger instead of ground for a brighter flavor.
