  1. Prepare the egg pasta dough by combining eggs and flour; roll out as thin as possible and cut into 2-inch wide strips or 4-inch squares.
  2. Dice the onion, carrot, and celery; mince the garlic.
  3. Melt butter in a saucepan over medium heat; add ground pork and cook until it loses its pink color, about 3 minutes.
  4. Add onion, carrot, and celery; cook until tender, about 5 minutes.
  5. Add garlic; cook for 1 minute.
  6. Add dry white wine, stirring with a wooden spoon to deglaze the pan; simmer until reduced by half, about 15 minutes.
  7. Stir in heavy cream and nutmeg; simmer until thickened, about 5 minutes.
  8. Add tomatoes and their juice, breaking them up with a wooden spoon; cover and simmer over low heat, stirring occasionally, for 2 hours.
  9. Season the Bolognese sauce with salt and pepper to taste.
  10. For the béchamel sauce, melt butter in a saucepan over low heat.
  11. Whisk in flour and cook for 1 minute.
  12. Gradually whisk in milk and bring to a boil, stirring constantly.
  13. Reduce heat; season with salt and pepper.

  22. Heat oven to 400°F (204°C).
  23. Loosely cover the lasagne with foil and bake until warmed through, about 20 minutes.
  24. Remove the foil and place the lasagne under the broiler until golden brown, about 5 minutes.
  25. Let the lasagne sit for 10 minutes before slicing and serving.
