  1. Preheat oil in a deep fryer or heavy pot to 350°F (175°C).
  2. In a mixing bowl, whisk together the flour, baking powder, salt, and sugar.
  3. Beat in the egg and milk until a smooth batter forms.
  4. Gently fold in the diced papaya, mango, pineapple, and guava.
  5. Cover the batter and refrigerate for 1 hour to allow the flour to hydrate.
  6. While the batter chills, prepare the mango coulis: In a saucepan, combine chopped mangoes, lemon juice, water, and sugar.
  7. Bring the mixture to a boil over medium-high heat, then reduce to a simmer.
