In a saucepan, stir together water and sugar. Simmer over medium heat for about 5 minutes until sugar has dissolved. Let syrup cool and place in a blender. Add fruit, ginger, lime juice and vodka. Blend until mixture is perfectly smooth and place in the metal dish. Cover and freeze for 4 or more hours, stirring the outer frozen mixture into the center every half hour, until it is firm but not solidly frozen. Or, freeze in an ice cream freezer according to manufacturer's directions
