Directions
-
Remove head, tail, and fins from the trout and discard. Wash the fish with water and rub all surfaces with a cut lemon. Pat dry thoroughly with paper towels.
-
Dredge the trout in flour, shaking off any excess.
-
In a very large skillet, heat the olive oil over medium heat until very hot. Fry the trout for 4 to 5 minutes on each side, or until cooked through and golden. Remove from the pan and let cool on paper towels. Reserve the frying oil.
-
Remove the skin and bones from the cooled trout and crumble the flesh into small pieces. Set aside.
-
Strain the reserved oil into another sauté pan. Cook the chopped onions in the oil until translucent.
-
Add the garlic, minced jalapeño, chopped cilantro, and hot red pepper flakes to the onions. Cook over low heat for 3 minutes, stirring gently.
-
Stir in the toasted pine nuts and the crumbled trout. Transfer the mixture to a serving bowl.
-
Drizzle with lemon juice and toss gently to combine. Chill thoroughly before serving cold as an appetizer.
Note
Storage: This dish is best served chilled. Store leftovers in an airtight container in the refrigerator for up to 2 days.
Substitutions: If whole trout is unavailable, you can use trout fillets, but adjust frying time accordingly. Fresh lemon juice is essential; bottled juice will not provide the same brightness.
Variations: For a milder version, reduce the number of jalapeños or omit the seeds. You can add chopped parsley if cilantro is not preferred.
