  1. In a wide frying pan, melt the butter over medium-high heat.
  2. Add the mushrooms and sauté, stirring frequently, until golden brown (about 5 minutes).
  3. Stir in the parsley, then remove the pan from heat and transfer the mushrooms to a large warm serving platter using a slotted spoon.
  4. Wipe the trout inside and out with a damp cloth.
  5. Coat the fish lightly with flour, shaking off any excess.
  6. Return the pan to medium heat and add the salt to the remaining butter.
  7. Place as many fish as will fit without crowding into the pan.
  8. Cook, turning once, until the fish is lightly browned and flakes readily with a fork (about 5 minutes per side for 1-inch thick fish).
  9. Remove the cooked fish from the pan and arrange on top of the mushrooms on the platter. Keep warm.
  10. Repeat the cooking process with the remaining fish.
  11. After removing the last fish, add the lemon juice and cream to the pan.
  12. Bring the sauce to a boil, stirring and scraping the bottom of the pan to blend with the drippings.
  13. Spoon the cream sauce immediately over the fish and mushrooms and serve.
