  1. Add the crushed crystal and chocolate malts to 1 1/2 gallons of cold water in a large pot.
  2. Bring the water and grains to a boil.
  3. Once boiling, remove the grains from the pot to prevent an ashy taste.
  4. Add the malt extracts to the hot water and stir until fully dissolved.
  5. Add the Cascade hops and freshly grated ginger root to the pot.
  6. Maintain a rolling boil for 60 minutes.
  7. During the final 1-2 minutes of the boil, add the Willamette finishing hops.
  8. Remove from heat and sparge the wort into the fermenter using cold water.
  9. Force cool the wort to yeast pitching temperature.
  10. Pitch the ale yeast into the fermenter.
  11. Allow fermentation to complete, then bottle with corn sugar for carbonation.

Do not allow the grains to remain in boiling water for extended periods, as this will add an "ashy" taste to the beer.

Use 3/4 cup of corn sugar for bottling to achieve proper carbonation.
