Description

These vegetarian pot stickers offer a perfect balance of textures, featuring a crisp, golden-brown bottom and a tender, steamed top. The filling combines seasoned tofu, brown rice, fresh shiitake mushrooms, and aromatic basil for a hearty bite. They are served with a vibrant, zesty dipping sauce made from fresh tomatoes, daikon radish, and shiso leaves, providing a refreshing contrast to the rich dumplings. Ideal for appetizers, lunch boxes, or a light dinner, these pot stickers are easy to assemble and cook.

Ingredients

Directions

  1. In a small bowl, combine the diced tomato, grated daikon, chopped shiso leaves, chopped green onions, lemon juice, 2 tablespoons of the tamari, cumin seeds, and chili powder.
  2. Cover the dipping sauce and refrigerate overnight to allow flavors to meld.
  3. In a medium bowl, combine the cooked brown rice, squeezed tofu, chopped shiitake mushrooms, fresh basil, black olives, ground red chili pepper, sesame oil, and the remaining 2 tablespoons of tamari.
  4. Cover the filling mixture and refrigerate for 30 minutes to firm up.
  5. Place one pot sticker wrapper on a clean, dry surface and put 1 tablespoon of the chilled filling in the center.
  6. Dampen the edges of the wrapper with water using a finger or brush.
  7. Fold the wrapper in half over the filling and press the edges firmly together to seal, creating a half-moon shape.
  8. Repeat the process with the remaining wrappers and filling, keeping finished pot stickers covered with a damp cloth to prevent drying.
  9. Heat a thin layer of salad oil in a non-stick skillet over medium heat.
  10. Arrange the filled pot stickers in a single layer in the skillet, ensuring they do not overlap.
  11. Cook until the bottoms are golden brown and crisp, about 2-3 minutes.
  12. Carefully add 1/4 cup of water to the skillet and immediately cover with a lid.
  13. Reduce heat to low and cook for 6 minutes, or until the water has evaporated and the wrappers are tender.
  14. Remove lid and cook for another minute to crisp the bottoms again if needed.
  15. Transfer cooked pot stickers to a serving plate. Repeat cooking process for remaining batches.
  16. Serve hot with the chilled dipping sauce on the side.

Note

Ensure tofu is thoroughly squeezed to remove excess moisture; this prevents the filling from becoming watery and helps the dumplings hold their shape.

If shiso leaves are unavailable, you can substitute with fresh mint or cilantro, though the flavor profile will differ slightly.

The dipping sauce can be made up to 2 days in advance. The longer it chills, the better the flavors develop.

To keep wrappers from sticking together while assembling, work with one or two wrappers at a time and keep the rest covered with a damp towel.

For a gluten-free version, ensure you use gluten-free tamari and verify that the pot sticker wrappers are made from rice flour or are certified gluten-free.
