  1. Cook the long grain rice in boiling water for 30 to 35 minutes until tender, then drain well and allow to cool slightly.
  2. Heat the sunflower or safflower oil in a large skillet over medium heat. Add the chopped onions and grated carrots, and saut until softened and translucent, about 5-7 minutes.
  3. Add the finely chopped button mushrooms to the skillet and cook with the vegetables until the mushrooms have released their moisture and are browned.
  4. In a large mixing bowl, combine the cooked rice, sauted vegetable mixture, chopped nuts, bread crumbs, and dried parsley.
  5. Beat the eggs in a separate small bowl, then pour them into the rice mixture. Add the garlic powder and ground black pepper. Mix thoroughly until all ingredients are evenly combined.
  6. Stir in the low fat mozzarella cheese, reserving a small amount for the top if desired.
  7. Preheat your oven to 350F (175C). Grease a loaf pan or line a baking sheet with parchment paper.
