  1. Preheat oven to 350°F (175°C). Grease a 13x9-inch baking dish.
  2. In a medium saucepan, heat WATKINS Garlic Liquid Spice over medium heat.
  3. Add chopped onion to the saucepan and sauté until tender, about 5 minutes.
  4. Stir in all-purpose flour and mix well to form a roux.
  5. Gradually stir in tomato sauce, water, WATKINS Inferno Hot Pepper, Chicken Soup Base, Mexican Oregano, and Cumin.
  6. Cook and stir constantly until the mixture begins to boil and thickens, about 3-5 minutes.
  7. Remove saucepan from heat and slowly stir in 1 cup of sour cream until smooth.
  8. In a large bowl, combine 1 cup of the prepared sauce, finely chopped cooked chicken, 1 cup of shredded cheddar cheese, and green chiles. Mix well.
  9. Dip one corn tortilla at a time into the remaining sauce in the saucepan to soften, then place on a plate.
  10. Spoon some of the chicken mixture onto each softened tortilla and roll up tightly.
  11. Arrange rolled enchiladas seam-side down in the prepared baking dish.
  12. Spoon any remaining sauce over the top of the enchiladas.
  13. Sprinkle with the remaining 1 cup of shredded cheddar cheese.
