  1. Soak dried large white beans overnight in plenty of water, then drain.
  2. Combine soaked beans, chicken broth, minced garlic, and half of the chopped onions in a large soup pot.
  3. Bring the mixture to a boil over high heat.
  4. Reduce heat to low, cover, and simmer until beans are very soft, approximately 3 hours or more.
  5. Add more chicken broth if the mixture becomes too thick during simmering.
  6. While beans cook, heat oil in a skillet over medium heat.
  7. Sauté the remaining chopped onions until tender.
