  1. Place the white chocolate pieces, unsalted butter, and light rum in a large heatproof bowl.
  2. Set the bowl in a very low oven with the door slightly ajar to melt the chocolate slowly; this should take about 45 minutes.

  4. Transfer the beaten yolks to the top of a double boiler over simmering water.

  6. Return the thickened egg yolks to the mixer bowl.
  7. Once the chocolate mixture is fully melted, stir it with a wooden spoon until completely smooth.
  8. Slowly beat the warm egg yolk mixture into the melted chocolate mixture until combined.
  9. In a separate chilled bowl, beat the heavy cream until stiff peaks form.
  10. Gently fold the whipped cream into the chocolate mixture until just combined.
  11. In a clean, dry bowl, beat the egg whites until stiff peaks form.
  12. Carefully fold the beaten egg whites into the chocolate-cream mixture, ensuring the batter remains airy.
