This unconventional marmalade transforms humble ingredients into a sophisticated spread. By combining the bitter zest of fresh oranges with the tropical sweetness of crushed pineapple, it creates a complex flavor profile that is both bright and deep. The addition of maraschino cherries and walnuts adds unexpected pops of color, sweetness, and crunch. It pairs beautifully with creamy cheeses, yogurt, or as a glaze for roasted meats. Ingredients

Directions

  1. Wash oranges thoroughly and cut into wedges, removing any visible seeds.
  2. Process the orange wedges, including rind and pulp, in a food processor until thoroughly chopped.
  3. Transfer the orange mixture to a large pot and add 1 cup of water for every cup of orange mixture.
  4. Bring the mixture to a boil over high heat, then reduce heat and simmer for 10 minutes.
  5. Add one large can of crushed pineapple to the pot and bring the mixture back to a boil.
  6. Continue boiling for an additional 10 minutes, then remove from heat.
  7. Cover the pot and let the mixture stand overnight or for at least 12 hours to allow flavors to meld.
  8. After resting, measure the orange and pineapple mixture. For every 1 cup of mixture, add 1.5 cups of sugar.
  9. Return the pot to heat and bring the mixture to a boil, stirring frequently to dissolve sugar.
  10. Continue cooking, stirring often, until the mixture thickens to a jam-like consistency.
  11. Just before removing from heat, stir in one bottle of maraschino cherries and chopped walnuts if desired.
  12. Ladle the hot marmalade into sterilized jars and seal immediately.
