  1. Rinse the wild rice in a strainer under cold running water.
  2. Place the rinsed wild rice in a medium bowl and cover with boiling water.
  3. Let the wild rice soak for 30 minutes, then drain thoroughly.
  4. Rinse the brown rice in a strainer under cold running water.
  5. In a medium saucepan, combine the drained wild rice, rinsed brown rice, 3 cups of water, 1 tablespoon oil, and 1/2 teaspoon salt.
  6. Cover the saucepan and bring the mixture to a boil over high heat.
  7. Reduce the heat to low to maintain a gentle simmer.
  8. Cook without stirring until all the liquid is absorbed and the rice is tender, about 45 minutes.
  9. Transfer the cooked rice to a large bowl and refrigerate until very cold, about 2 hours.
  10. While the rice chills, prepare the dressing by combining olive oil, red wine vinegar, Dijon mustard, minced garlic, poultry seasoning, thyme, basil, oregano, salt, and pepper in a jar with a tight-fitting lid.
