  1. In a 12-inch frying pan or 2- to 3-quart saucepan, combine the minced onion, sliced mushrooms, minced garlic, and 1/2 cup water.
  2. Cook uncovered over high heat, stirring often, until the liquid evaporates and a brown film forms on the bottom of the pan, about 15 minutes.
  3. Add 2 or 3 tablespoons of water and stir vigorously to scrape up the browned bits (fond) from the bottom; cook until the film forms again.
  4. Repeat this process of adding small amounts of water and scraping the pan 4 to 5 times, until the onions and mushrooms are richly browned and caramelized, about 15 minutes total.
  5. Rinse the wild rice thoroughly under cold water and drain well.
  6. Add the rinsed wild rice and the chicken broth to the pan with the browned vegetables.
  7. Bring the mixture to a boil over high heat, then cover the pan, reduce heat to low, and simmer for 30 minutes.
  8. While the rice simmers, rinse the pearl barley thoroughly and drain.
  9. Add the rinsed barley to the pan with the rice and broth.
  10. Continue to simmer covered until both the rice and barley grains are tender to the bite but still slightly chewy, about 20 minutes longer.
  11. Remove from heat and season with salt and pepper to taste. Fluff with a fork before serving.
