  1. Sauté 10 ounces of turkey breast meat and 6 ounces of turkey leg meat in butter until just seared.
  2. Add scotch whiskey and carefully flame.
  3. Place the meat mixture in a blender with oats, egg whites, poultry seasoning, sage, and heavy cream.
  4. Puree the mixture for 30 seconds until smooth.
  5. Dice the remaining breast and leg meat and fold it into the pureed mixture.
  6. Stir in the roasted cashews.
  7. Transfer the mixture into a pastry bag and pipe it into prepared hog casings.
  8. Tie off the ends of the casings securely.
  9. Poach the haggis in turkey or chicken stock for about 25 minutes, until the internal temperature reaches 115 degrees.
