Ingredients

Directions

  1. Sift the flour and salt together in a mixing bowl.
  2. Add the beaten egg and cold water to the flour mixture and mix thoroughly until a dough forms.
  3. Knead the dough on a lightly floured surface until smooth and elastic.
  4. Wrap the dough and refrigerate for 1 hour to rest.
  5. Roll the rested dough out on a floured board until it is paper-thin.
  6. Dust the rolled dough with flour and cut it into 3-inch squares.
  7. Stack the cut squares between sheets of parchment paper to prevent sticking.
  8. In a separate bowl, combine the chopped pork, chopped shrimp, finely chopped onions, soy sauce, chopped button mushrooms, salt, and cornstarch. Mix well to create the filling.
  9. To wrap, place a wonton skin on the palm of your left hand.
  10. Place 1/2 teaspoon of the filling in the corner of the square closest to your wrist.
  11. Fold that corner over the filling, then roll the dough toward the center of the square to form a triangle shape.
  12. Join the two loose ends of the triangle together using a tiny dab of water or egg wash as a sealant.
  13. Repeat until all filling and skins are used.
  14. For fried wontons: Heat 3 to 4 inches of vegetable oil in a deep pot or frying pan over medium-high heat.
  15. Carefully add wrapped wontons to the hot oil and fry until golden brown and crispy.
  16. Remove fried wontons with a slotted spoon and drain on paper towels.
  17. For soup wontons: Bring a large pot of salted water to a boil.
  18. Drop wontons into the boiling water a few at a time.
  19. Cook until the wontons float to the surface, indicating the meat is cooked through.
  20. Remove cooked wontons with a slotted spoon and set aside.
  21. In a separate pot, bring chicken broth, gourmet powder, soy sauce, and sesame oil to a boil.
  22. Season the broth with salt to taste.
  23. Add the boiled wontons to the broth and heat just enough to warm them through; do not overcook.
  24. Serve the soup in bowls, garnished with diced green onions or Chinese parsley.
  25. Optionally, top the soup with cooked chicken or barbecue pork.

Note

Filling Ingredients: The filling requires: 1/4 lb chopped pork, 1/4 lb chopped raw shrimp, 2 tsp finely chopped onions, 2 tbsp soy sauce, 2 tbsp chopped button mushrooms (optional), 1/2 tsp salt, and 1 tsp cornstarch.

Soup Ingredients: For the soup base, use: 1 quart chicken broth, 1/4 tsp gourmet powder, 1 tsp soy sauce, 2 stalks green onions chopped, Chinese parsley, salt to taste, and a few drops of sesame oil (optional).

Variations: You can serve these wontons as crispy appetizers for cocktail parties or as a comforting soup. Cooked chicken or barbecue pork may be added on top of the soup for extra richness.

Wrapping Tips: There are many ways to wrap wontons, but the triangle fold described is one of the simplest. Ensure the edges are sealed tightly to prevent leakage during cooking.

Cooking Advice: Do not overcook the wontons in the broth, as the skins can become mushy. For fried wontons, ensure the oil is hot enough to achieve a golden brown color without absorbing too much oil.
