Ingredients

Directions

  1. Prepare all vegetables: shred 4 cups of green cabbage, shred 1 cup of carrot, thinly slice 1 cup of onion, thinly slice 1 cup of green bell pepper, mix 2 cups of zucchini and yellow squash, and blanch 12 spears of broccoli.
  2. Heat vegetable oil in a large sauté pan or wok over medium-high heat.
  3. Add the diced chicken breast or cubed firm tofu to the hot oil and stir-fry until lightly golden brown and cooked through.
  4. Add the prepared vegetables (cabbage, carrot, onion, bell pepper, squash, and broccoli) to the pan.
  5. Continue stir-frying until the vegetables are lightly cooked but still crisp-tender; do not overcook.
  6. Add the uncooked udon noodles and oyster sauce (if using) directly to the pan.
  7. Toss and cook everything together until the noodles are tender and cooked through, using the moisture from the vegetables to help cook the noodles.
  8. Season to your taste with salt, pepper, or additional soy sauce if desired.
