  1. Preheat the oven to 325°F (165°C).
  2. Place the beef brisket fat-side up on a rack inside a roasting pan.
  3. Pour the liquid smoke around the meat in the pan.
  4. Cover the roasting pan tightly with foil and place it in the preheated oven.
  5. Roast for 4 hours, turning the meat once halfway through, until very tender.
  6. Remove the foil for the last 30 minutes of cooking to allow the exterior to brown.
  7. Remove the brisket from the oven and let it cool completely.
  8. Wrap the cooled meat tightly in plastic wrap and refrigerate overnight.
