Description

This Zucchini & Green Herb Frittata is a vibrant, rustic Italian dish that transforms simple ingredients into an elegant meal. The tender, diced zucchini releases just enough moisture to keep the eggs moist, while a generous handful of fresh herbs like basil, thyme, and oregano provides a bright, aromatic punch. Melted mozzarella adds a creamy, savory richness that pairs beautifully with the sharp bite of grated Parmesan. Finished with a splash of balsamic vinegar for acidity, this frittata offers a perfect balance of textures and flavors.

Ingredients

Directions

  1. Preheat the broiler to high.
  2. Place a 10-inch oven-safe skillet over high heat.
  3. Add the olive oil to the hot skillet and heat briefly until shimmering.
  4. Add the diced zucchini, salt, and crushed red pepper flakes.
  5. Cook, stirring occasionally, until the zucchini begins to soften, about 3 minutes.
  6. Reduce the heat to medium-low.
  7. Pour in the beaten eggs, then stir in the green onions and minced fresh herbs.
  8. Cook gently, using a spatula or fork to lift the cooked edges from the sides of the pan, allowing the uncooked egg to flow underneath.
  9. Continue cooking until the frittata is almost set but still slightly moist on top, about 4 to 5 minutes.
  10. Scatter the grated mozzarella cheese evenly over the top of the frittata.
  11. Transfer the skillet to the preheated broiler.
  12. Broil just until the top is lightly browned and the center is fully set, watching closely for 30 to 45 seconds.
  13. Remove from the oven and immediately brush with balsamic vinegar.
  14. Sprinkle with grated Parmesan cheese.
  15. Slice and serve hot or at room temperature.

Note

Herb Variations: A mixture of several kinds of fresh herbs is preferable for complex flavor. Try using thyme, basil, oregano, and/or tarragon. Adjust quantities based on your preference for herb intensity.

Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a microwave or toaster oven, or enjoy cold as part of a picnic lunch.

Safety: Use oven mitts when handling the skillet, as the handle will become very hot during broiling. Ensure your skillet is oven-safe before placing it under the broiler.

Customization: Feel free to add other vegetables such as spinach, bell peppers, or mushrooms along with the zucchini for additional texture and nutrients.
